To complement the spirit of the spooky October 31st festival, COOKS&CO has created a 20-minute Pumpkin Soup recipe that is sure to warm the cockles of any trick or treater once the pumpkin has been used to carve out a scary pumpkin.
Using the ‘discarded’ flesh of the pumpkin and roasting it in COOKS&CO’s wonderfully versatile and neutral tasting grapeseed oil – which means the pumpkin remains the star – this easy to follow recipe combines simple ingredients for a tasty Halloween treat that mum or dad can make with the kids.
It’s also perfect for dinner parties as a winter warming starter, or as an autumnal lunchtime treat.
Ingredients:
Ikg pumpkin chopped into large roasting chunks
1 sliced onion
4 cloves of garlic
1 sprig of rosemary
50ml COOKS&CO grapeseed oil
1 tsp sea salt
Cracked black pepper
6 cups of chicken or vegetable stock
Preparation:
1. Heat oven to 180°C. Place pumpkin, onion, garlic and rosemary in a baking tray.
2. Brush pumpkin with the COOKS&CO grapeseed oil. Sprinkle with salt and plenty of cracked black pepper. Bake for 1 hour or until softly roasted.
3. Pour a cup of stock into the pan. Lightly blend in batches with the rest of the stock, pouring into a saucepan.
4. Bring to the boil and then simmer for up to 20 minutes.
5. Serve with crusty bread.
