Australia - Tasmanian lamb

04 Feb 2012

The Bruny Island brand from Tasmania is about to go national, and it's an indigenous success story.

The Indigenous Land Corporation owns Murrayfield Sheep Station on Bruny Island, and is now the operater of the Ayers Rock Resort in Central Australia.

The four thousand hectare property has previously been marketing lamb under the Bruny Island brand to the Tasmanian market.

Butcher Shane Cross says he will be part of a team to introduce the lamb to the mainland at Ayers Rock resort next month.

"I should imagine we'll take some whole carcasses up and we'll prepare meat from top end to bottom end," he says.

"Obviously the high grade cuts for their better restaurants and obviously right down to a sausage or a hamburger for the low end."
